Milos: How it started
Growing up in a household where cooking was part-sustenance, part-artistic expression in Patras Greece and with a hefty culinary heritage in his suitcase, Costas Spiliadis crossed the Atlantic in order to study, first at NYU in New York City and later at Concordia University in Montreal. In 1979, he opened the first estiatorio Milos in Montreal which became one of the city’s most influential dining destinations. Focusing on simplicity (and specifically on cooking fish perfectly) and drawing inspiration from the finest ingredients, estiatorio Milos quickly gained an international reputation. It was a matter of time to take the whole world by storm since opening his first restaurant in New York in 1997, followed by six additional restaurants around the world.
This is why Milos enjoys a long-standing reputation for its refined, yet unpretentious, approach to the Greek culinary tradition, offering the freshest Mediterranean fish and seafood. As a result, Spiliadis is considered a pioneer of the Hellenic food scene, as well as one of the most influential chefs internationally.

This year, Athens welcomed the first Milos hotel in the world which of course includes a restaurant that embraces the concept of the brand. At xenodocheio Milos, guests will discover a cooking philosophy of minimum interference and respect for the highest quality products and ingredients. In a soothing ambiance that feels like home, the restaurant’s team provides genuine care, ensuring that every meal is special. Traditional breakfast dishes such as eggs, smoked salmon and cereals will be served alongside Greek specialties including Bougatsa, a Greek cream-filled filo pastry, and kayanas, scrambled eggs with fresh tomato and feta. Drinks include a selection of coffees, fresh fruit juices, teas and herbal infusions. Passion for seafood is evident throughout the menu where guests enjoy well-known dishes while establishing new favourites. Sourcing produces from distinguished farmers and carefully selected fishermen, the restaurant serves the highest quality meat and finest fresh seafood including mouth-watering oysters, fresh Greek ceviche and wild red Madagascan shrimp. Bring the meal to an end with celebrated Greek desserts including the delicious Karidopita and Baklava.
Xenodocheio Milos
The hotel celebrates unparalleled taste and world-class hospitality. Located in downtown Athens, opposite Old Parliament, an area bursting with history, art and culture, Milos boutique hotel features the same beloved marble and light wood décor that have become symbolic of the brand’s restaurants.
The rooms have private terraces and views of the most charming part of Athens as well as great interiors curated by Divercity Architects and Nikolas Travasaros. The building is formed by two “twin” neoclassical buildings that are joined by a later glass addition on the top floors. Architecture and interior design
The building of xenodocheio Milos was constructed by INTRAKAT, a leading player in Greece’s construction sector. A1 Architects and Dimitris Agiostratitis converted the historic building to a hotel and the design concept and interior design was handled by Divercity Architects and Nikolas Travasaros.

The total area of the hotel is 4,400 sqm consisting of a ground floor, 5 upper floors and 2 basements and it has a capacity of 43 keys. The interior style of the hotel combines Neoclassical refined living with comfort and modern technology.
From cozy classics to one-bedroom suites with outdoor terraces and Jacuzzis that overlook Old Parliament Square and Lycabettus Hill, the goal was to create a home away from home. Local luxurious materials such as the white Dionysos marble and emphasis on exquisite textures and arty details create an elegant ambiance and give the hotel a unique but so Athenian style.
