Two Culinary Traditions, One Table
Pino’s concept rests on a simple premise: put Italian technique next to Cycladic produce and let them talk to each other. Piscazzi builds his menu around what Paros gives him each season, fresh seafood, local herbs, and produce, paired with a tight selection of Italian ingredients he brings into the mix. The result is a menu that moves between the two culinary cultures rather than picking one over the other.
The rhythm of the day shapes how the restaurant works. Daytime service leans toward sharing plates and a relaxed, social pace. By evening, Pino shifts into a full dinner service, with dishes matched to an Italian wine list and a cocktail menu built specifically for the food.
A Hotel Built Around the View
VIONE sits on sloping land in Ambelas, arranged in tiers that face the Aegean. The property has 40 suites, 28 of them with private pools, and the design keeps sightlines to the sea from most of the property.
Wellness is handled by DIONE Spa, one of the larger spa facilities on Paros. It includes a heated indoor pool, hammam, sauna, jacuzzi, gym, and a treatment menu built around the hotel’s overall approach to slow living.
Pino gives VIONE a dining identity that stands on its own, not just a hotel restaurant but a reason to visit in itself.
